Fat head dough is brilliant for making pasties, sausage rolls, cheese twists and pizza etc pre- cook the fillings/toppings as the dough only needs 15 / 20 minutes cooking time.
10oz of shredded mozzarella (get the pre-grated bags)
5oz ground almonds
1 tsp baking powder
(3 tbsp of splenda in with the dry ingredients for a sweet dough)
Melt the mozzarella in the microwave in 30 second intervals until it is really soft and runny and slides easily off the spatula.
Add the egg and combine well
Mix the baking powder into the ground almonds and then add gradually to the mozzarella and egg mix. Combine well. When the mix forms a dough, knead thoroughly, work the dough to ensure the ground almonds are completely combined with the mozzarella.
To roll out the dough, place it between 2 sheets of greaseproof paper. Or, if necessary, put a little olive oil on your hands to stop it sticking if you are making pasties or sausage rolls etc.
Line a baking tray with greaseproof paper and bake on gas mark 3/325f/170c for 15 to 20 minutes. It is best to use precooked fillings as the dough cooks quickly at a low temperature.
Store in an airtight container in the fridge for up to 3 days, will also freeze.
