Pinch of salt
200g full fat cream cheese
100g grated cheddar cheese
Bring salted water to the boil then add the cream cheese and the cheddar cheese. Whisk until the cheese is melted and the sauce thickens up.
Perfect for pouring over veggies, or the classic Cauliflower cheese.
All you need is to cut into florets a whole cauliflower, boil it till slightly tender in salted water (save 200ml of this for the cheese sauce). Place the cauliflower in a heatproof dish, 6 inch × 4 inch, and put in the oven whilst you make the sauce, 220c / gas 7.
Pour over the cheese sauce and return to the oven and bake for a further 20 minutes.
